What would you do about the condensation from the chilling?

Hmm, good question. In principle, making the air less excessively humid can only be good for the comfort level, but there is the irritating problem of avoiding it falling on people.

Hmm. How about a chilled ceiling in an eggbox sort of shape, with the aim of encouraging condensation to run down to the lowest points where there are cups to catch it and capillaries to pipe it off to somewhere out of the way? Would that work?
