I suspect I would use my default reaction for light things in the kitchen that are on fire, which is to open the back door and throw them out of it. Simon living on the 1st floor may have a different approach!
My reaction for chip pans is unknown, but running away sounds wise, posibly even picking up a towel from the back of the door on the way out, soaking it under the outside tap and coming back to throw it onto the chip pan. (Squeezed out.)
My brother did the 'throw out of the kitchen' thing once. Seeing the grass in the garden burning at night is spooky. I try to always have a lid nearby and repeat 'no water, no water' in my head...
